Pour the sugar and water into a saucepan. Let the sugar dissolve and add the berries. Simmer for 5 minutes. Add the vinegar and bring back to the boil. Pour into a clean container and allow to cool. Strain into a sterilised container. Keep refrigerated until needed.
For serving mix 50ml of rapeseed oil with 100ml of the blackberry gastrique.
