NG7/Soup

This dish has a nettle soup and is very much an early summer dish. The great thing about nettles is their robustness. The younger the nettles, the more tender they are, which obviously delivers a distinctive flavour – less harsh than older ones. When you’ve got the really robust ones they pack a much bigger flavour, and a stronger punch.
