Thisis a great spring dish celebrating an under-used and relatively unknown vegetable. Alexanders is a lovely juicy vegetable that’s braised here in an emulsion. With it is a pheasant egg that’s been slow-cooked, a 7-year-old parmesan, and a truffle sauce. Really fresh, really clean.
