For the Asparagus Juice

  • 300 g asparagus
  • 300 ml juiced asparagus
  • 50


Blend the asparagus with the juice until smooth. With the blender running on low, add the oil followed by the mayonnaise. Season with a little salt and check the consistency.

If the mix is too thick, add a little more juice. Pass through a chinoise and chill until needed.
