For the Smoked Oil

  • 500 ml sunflower oil


Place the sunflower oil in a heatproof metal bowl. Heat a barbeque and in the normal way. Throw some wood chips on the embers and place the oil on the wire rack in the middle of the barbeque. Close the lid and leave for 1 hour until the smoke has died down. Remove the oil and store in an airtight container until needed.
