Seperate the eggs, place the yolks into a tray lined with silicone paper. Bring the oil up to 62°C and pour over the egg yolks, enough to cover. Place in an oven set at 62°C and cook for 45 minutes. When ready to use take out of the oil using a slotted spoon and season with a little sea salt.
