For the White Cabbage

  • ¼ white cabbage, finely chopped
  • lemon juice to taste
  • fine salt to taste
  • mayonnaise


Season the cabbage with the salt and lemon juice. Leave to stand for 30 minutes to allow the cabbage to slightly break down. Squeeze out any excess moisture and add a little mayonnaise to bind. Re-season with salt and lemon juice if needed.
