For the Pickled Mooli and Broccoli Stem

  • 40 x 1 mm slices of black mooli
  • 40 x 1 mm slices of broccoli stem

Method

Place the mooli and broccoli stem into 2 separate sous vide bags. Cover with the pickling juice and compress on full. Store in the bags until needed.
