For the Pickled Turnip

  • 50 g caster sugar
  • 75 ml white wine vinegar
  • 1


Mix the sugar and vinegar together. Peel the turnip and slice on a mandoline into 1mm slices. Place in a sous vide bag and compress on full. Store in the bag until needed.
