For the Avocado Purée

  • 250 g avocado pulp
  • 150 ml milk
  • salt to taste


Blend the avocado with the milk for 30 seconds. Season with salt and lemon juice. Pass through a chinoise. Transfer to a piping bag and store in the fridge until needed.
