For the White Balsamic Jelly

  • 100 ml white balsamic vinegar
  • 100 ml water

Soak the gelatine in cold water for 10 minutes to hydrate. Place the vinegar, water and agar-agar into a pan. Bring up to the boil, stirring constantly. When boiling, pull off the heat and add the gelatine. Season if necessary and then pour out evenly onto a flat surface. Allow to cool and set for 15 minutes.
