We wanted to create a very light version of a duck liver dish, so we made a duck liver muesli: gelatine, chicken stock, duck livers blended and then poured into nitrogen. We added granola and some fine beans for texture, pickled cranberries, and an apricot purée. What we created is this muesli-style dish which goes against the grain of traditional duck liver dishes that can be very rich and heavy.
