For the Potato

  • 1 kg pink fir apple potatoes
  • pinch of salt


Peel the potatoes and place in a pan. Add enough cold water to cover, and a generous pinch of salt. Bring the potatoes to the boil. Refresh in cold water. Place the potatoes into a sous vide bag and compress on full. Steam at 100°C until tender. When the potatoes are cooked they are pushed through a ricer directly onto the plate.
