For the Roasted Girolles

  • 50 ml olive oil
  • 350 g girolles
  • 5

Method

Heat the olive oil gently and add the girolles. Sauté for 2 minutes. Add the shallot and chives. Add the stock and emulsify with the butter. Correct the seasoning if necessary.
