For the Pickled Shallot

  • 2 banana shallots
  • 25 g caster sugar
  • 100 ml

Method

Cut the shallots into rings. Dissolve the sugar in the vinegar. Pour over the shallots and leave for a minimum of 2 hours to infuse.
