Bring the sugar, vinegar and water to the boil and leave to cool. Pour over the vegetables and place in a sous vide bag. Compress on full. This is done just before service and means that you keep the flavour of the vegetables, giving a fresh, sweet and sour taste, unlike traditional methods where you can generally only taste the sweetened vinegar.
