Mackerel is one of the most underrated fish on the market. We use it a lot in different guises, it’s a great fish that’s very sustainable. This dish has got horseradish, beetroot and a parsley oil that’s really fresh. Its got toast topped with cured pork fat which adds a creamy texture, and smoked herrings’ roe that adds a salty, smoky flavour.
