  • 4 large beetroot
  • fine salt

Method

Wet the beetroot and roll in the salt. Place on a baking tray and pack tightly with more salt. Make sure the beetroot is fully submerged. Cook for 90 minutes at 160°C. Remove from the oven and leave to cool in the salt crust. When cool, remove from the s
