For the Horseradish Milk

  • fresh horseradish to taste
  • 200 ml semi-skimmed milk
  • fine salt to taste


Grate the fresh horseradish into the milk. Season with a little salt and leave to stand for 30 minutes. Pass through a chinoise. The milk will naturally thicken up a little. Store in the fridge until needed.
