This salad was based around the idea of having something really fresh and cooling on our tasting menu. The vegetables are juiced and poured into nitrogen, so they become quite sharp and fresh. There’s fresh ricotta on the base of the dish, which gives a creamy element. It’s finished with a little mustard dressing. Perfect for a long hot summer’s day.
