For the Peas

  • 200 g peas
  • fine salt
  • pinch of caster sugar


Blanch the peas in boiling lightly salted water for 1 minute. Refresh in ice water. Blend the peas for 2 minutes with a little of the cooking liquid. Season with a little salt and sugar if necessary. Store in an airtight container until needed.
