For the Beetroot and Onion Tuiles

  • 60 ml of the beetroot pulp left in the juicer
  • 3 large shallots, separated into layers
  • 75 <

Method

Preheat the oven to 80°C. Spread the beetroot pulp on a baking tray lined with baking paper and spread the onions out on another. Dry in the oven at 55°C for 12 hours or until completely dry. Leave to cool in a dry environment.
