In this dish there’s a sheet of oxtail on top of the pearl barley, and then it’s finished with a very light jus made from garlic, onion oil, chicken broth, and wild garlic flowers. It’s really fragrant. The oxtail melts through the pearl barley so you get layered flavours, and an almost gelatinous texture.
