Scallop/Belly Pork/Piccalilli: Pickled Cauliflower

For the Pickled Cauliflower

• 40 small cauliflower florets
• 25 ml pickling juice

Place the cauliflower florets in a sous vide bag with the pickling juice and compress on full. Store in the bag until needed.
