This dish has elderflowers, tomato and strawberry. It came out of the blue one day when we were looking into strawberries and elderflowers: they’re in season together. We’d been working on a dish using a sauce vierge: a classical dish where we’d added tomatoes and crushed coriander seeds. I wanted to infuse it with strawberries, and thought that something really clean, like a scallop, would add contrast.
