This dish has nuts, shoots, butternut squash purée, raw butternut squash, and chicory that adds bitterness. It’s got cumin and coriander, one of my favourite combinations, and roasted scallops that have been brushed with marmite butter. A late summer/autumn dish with plenty of texture.
