Place the sugar in a pan and gently heat until the sugar has completely caramelised. Add the walnuts and butter. Mix together until it starts to stiff en – work quickly at this point or the mix will become too stiff and unmanageable. Place onto a sheet of silicone and roll into a bar. Allow to cool. When needed, grate over the completed dish using a fine grater.
