This was inspired by a summer barbeque, with Greek and Turkish Influences. There’s kofta and really tender deer, there’s a purée of black aubergine, giving a charred flavour, and then there’s yoghurt, lemon and mint. Even though the flavours are from the barbeque, it’s not heavy on the palate, and it’s got plenty of depth.
