For the Aubergine Purée

  • 1 large aubergine
  • 50 ml dashi
  • 4

Method

Cut the aubergine in half lengthwise. Cook on a barbeque at high heat until thoroughly charred all over – this should take around 30 minutes. Alternatively cook over a gas flame – this shouldn’t take as long because of the intense heat, but you won’t get the desired smoked taste that you get from the barbeque.
