Blackberry Vinegar Sauce

For the Blackberry Vinegar Sauce

• 100 g beurre noisette
• 75 ml beetroot juice

Melt the beurre noisette. Add the beetroot juice followed by the blackberry vinegar. If you want it more acidic, add a little more vinegar. Season with salt if needed. Set aside until needed.
