Grapefruit Sauce

For the Grapefruit Sauce

• 200 ml fresh pink grapefruit juice
• 100 g beurre noisette

Reduce the grapefruit juice by half. Add the beurre noisette and emulsify. Add the grapefruit segments just before serving. Season with a little salt and sherry vinegar.
