Game is part of the heritage of the British Isles, and Grouse Indicates the beginning of our Season. This dish was inspired by Ian McAndrew, whose game cookery book was my first on the subject. There’s grouse with blackberries, watercress, brown breadcrumbs, and little sausages, made from pine and the grouse leg meat. This is a real autumn dish, celebrating one of the best game birds on the market.
