For the Sweetbread

  • 10 X 15 g nuggets of lamb sweetbread
  • 75 g sunflower oil
  • 75

Method

Peel the sinew from around the sweetbreads. Fry in the sunflower oil until brown on both sides. Add the butter and cook to your liking. Season with a little sea salt.
