For the Confit Garlic

  • 50 ml olive oil
  • 1 bulb of garlic cut in half widthways

Heat the oil in a frying pan. Place the garlic in the pan cut side down. Fry until golden brown. Add the butter and gently melt. Turn down the heat and gently cook for 1 hour until tender. Set aside to cool. Once cool, remove the cloves with a small spoon. Set aside until needed.
