For the Caramelised Shallots

  • 3 banana shallots, peeled and quartered lengthways
  • 75 ml white wine vinegar
  • 25


Place the shallots in a small ovenproof dish. Mix the rest of the ingredients together and pour over the shallots. Cover with damp silicone paper and seal with tin foil, then bake at 160°C for 1 hour.

Caramelise 1 of the cut sides of each shallot
