This is a game dish that’s ideal when squash is in season in autumn and winter. It’s got pennywort, some textures of butternut squash, a roast purée, a roe deer ragu, pumpkin seeds, bitter chocolate, chicory and a braised shoulder of deer: So it’s a little bit richer, and perfect for the time of year.
