Wood pigeon is available all year round, but in winter it’s a lot juicier and has a beautiful gamey flavour. Salt-baked celeriac and roast root vegetables go hand-in-hand with game. There’s also a vinaigrette, made from pine and thyme – both really strong woodland flavours to go with the dish.

  • 100 g 100% dark chocolate for grating over the final dish
  • 50 g watercress
