For the Mandarin and Pumpkin Granita

  • 250 ml mandarin juice
  • 250 ml pumpkin juice
  • salt


Mix the 2 juices together and season. Set up a stand mixer with the whisk attachment. Fill half the bowl with liquid nitrogen. Start whisking on a slow speed. Pour the juice into the nitrogen in 1 steady stream – as the liquid hits the nitrogen it freezes instantly creating a granita effect. Place in a container and store in the freezer until needed.
