For the Elderflower Granita

  • 10 fresh elderflower heads
  • 1 l water
  • 100 g


Place the elderflowers in a big bowl. Bring the other ingredients to the boil and pour the boiling syrup over the flowers. Make sure all the flowers are submerged. If not, put a clean plate on top of the flowers to keep them under the liquid. Cover and leave to infuse in the fridge for 2-3 days. Strain through muslin into a clean container.
