For the Pineapple Chutney

  • 500 g sweet pineapple, perfectly ripe, chopped
  • 250 ml white wine vinegar


Add the pineapple, vinegar, sultanas, spices and thyme to a pan. Warm gently until boiling. Reduce the heat and simmer until all the juice has evaporated. This will take around 90 minutes depending on how much liquid comes out of the pineapple.

Add the sugar and cook over a low heat until it has dissolved. Bring to the boil then simmer gently until thick and glossy. Stir in the pineappl
