Mix all the ingredients together and season with the salt. Half-fill a mixing bowl with liquid nitrogen and attach it to your machine with the whisk attachment. Start whisking on medium speed and slowly pour in the olive oil mix. The olive oil freezes immediately and the whisk helps to break the mix down, freezing it like a granita. Store in a metal bowl in the freezer until needed.
