This dish uses chocolate, sea salt, coffee, and olive oil jelly. The chocolate parfait is frozen and finished with a drizzle of aged balsamic vinegar. This gives you sour, sweet, cold, and frozen. It’s something that has evolved since 2005 and we reinvent it every year.
