For the Port Syrup

  • 500 ml port
  • 100 g caster sugar
  • 1


Bring the port, sugar, vanilla, anise and thyme to the boil. Reduce by two-thirds until a syrupy consistency is achieved. Pass through a chinoise. Season with the salt and citric acid. Store at room temperature until needed.
