Blackberry/Yoghurt/Pine

This dish celebrates autumn when blackberries are in full season. It’s dressed blackberries in blackberry vinegar, with yoghurt mousse and a pine ice cream. It has yellow berberis flowers scattered all over the top, which have a tannin flavour, very similar to apples.
