For the Blackberry Vinegar

  • 75 g caster sugar
  • 100 ml water
  • 750

Method

Pour the sugar and water into a saucepan over a medium heat.

Let the sugar dissolve, then add the berries. Simmer for 5 minutes.

Add the vinegar, bring it to the boil and remove from the heat. Pour into a clean container and leave for 3 days to allow the fruit to break down. Strain through a fine mesh sieve. Add 150
