This dish is basically blueberries that have been marinated in blueberry vinegar. There’s also granola, which I love: It’s got a brilliant texture, it’s chewy, it’s got coconut and oats. We’ve made a vanilla ice cream which has been smashed in nitrogen. We’ve got a rocket and tarragon granita, which is really floral, very herbaceous. When you eat it you just feel healthy, so it’s great to take you towards the end of a meal.
