For the Iced Vanilla Panna Cotta

  • 1 leaf of gelatine
  • seeds from 2 vanilla pods
  • 125 ml


Soak the gelatine in iced cold water for 10 minutes to hydrate. Split the vanilla pods and scrape out the seeds. Place all the ingredients into a pan and gently bring to the boil. Add the gelatine and leave to stand for 30 minutes. Strain the mix through a chinoise and cool over ice. When semi-set, place into 5cm x 5cm cylindrical moulds and freeze.
