Poached Peaches

For the Poached Peaches

• 5 ripe peaches

Bring a large pan of water up to the boil. Using a sharp knife, make a small cross in the bottom of each peach. Have ready a bowl of iced water.

Drop the peaches into the boiling water for 30 seconds, take out and place in the iced water for 30 seconds, then drain. Peel the peaches, cut in half and remove the stone.
