Emma, our development chef, came up with the idea of brown butter and popcorn done like a parfait. It wasn’t quite right at first as it was too rich, so by chance we came up with miso caramel and passion fruit, and it worked! This goes to show how a dish can grow through collaboration, with the team all playing a vital creative role.
