For the Popcorn Powder

  • 125 g caster sugar
  • 70 g liquid glucose
  • 50


Place the sugar, glucose and water in a large saucepan and cook to a light caramel. Add the baking powder and gently stir. Whisk in the butter and remove from the heat. Pour the caramel over the popcorn and allow to cool. Place in a blender and pulse until completely broken down. Store in an airtight container until needed.
